 Method: 

  1. Roast the spices
    • Take a pan, heat ghee in it. Add all whole spices like coriander , cumin, saunf, peppercorns, methi, mustard, and dried red chilies. Roast till aromatic.
  2. Grinding the masala
    • To make masala paste, in a blender jar, add the roasted spices, ginger, garlic, and pulp of tamarind . Grind into a paste with a little bit water.
  3. Prepare the base
    • Take a pan, heat ghee. Add curry leaves and sliced onions . Sauté until golden brown.
  4. Cook the masala
    • Add the ground paste and roast on medium flame till the ghee separates and the masala turns deep color.
  5. Add the eggs
    • Gently add boiled eggs, slit halfway for better absorption. Coat them nicely in the masala.
  6. Simmer & serve
    • Let it cook for 3–4minutes, it will allow the eggs to soak up the flavors of the masala. Adjust salt.
