
Chicken Bhuna Masala is an example of best Indian chicken curry. It is cooked on slow flame with the use of onions, tomatoes, and spices to provide a rich flavor. This recipe is combination of thick masala gravy with chicken pieces. Chicken Bhuna Masala is eaten with naan and rice.
Ingredients:
- 500 gm of boneless or with bone chicken
- 2 large onions, finely sliced
- 2 medium tomatoes, finely chopped
- 2–3 green chilies, slit
- 1 tbsp ginger garlic paste
- 3 tbsp oil (mustard oil or vegetable oil)
- 1 tsp cumin seeds
- 1 bay leaf
- 1-2 whole cardamoms
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1½ tsp coriander powder
- 1 tsp garam masala
- 1 tsp cumin powder
- Salt as per taste
- Chopped coriander leaves for garnish purpose
Method:
- Take oil in a pan and heat it. After heating the oil add cumin seeds, bay leaf, and cardamoms and splutter them.
- Now add fine chopped onions and cook it till it turns golden brown. This is an important step for deep taste of Bhuna Masala.
- In cooked onion ,add ginger-garlic paste and green chilies and cook it properly.
- Add tomatoes and cook it on medium heat till it melts and the oil starts off to split.
- Now add all the spices like turmeric powder, red chili, coriander, and cumin and cook, till it turns aromatic and rich.
- Add the chicken portions and coat them nicely with the masala. Cook on high warmness for 5-7 minutes, stirring constantly.
- Lower the flame ,cover it and cook the chicken for 15–20 minutes to avoid the burning of masala and chicken .
- Now let the chicken cook properly and masala becomes thick. Once chicken is cooked properly sprinkle garam masala and garnish it with fresh coriander leaves
Serving Tips:
- Naan, roti, or paratha can be used to serve.
- Basmati steamed rice use for serving.
- For controlling the spiciness, you can use cucumber raita or salad.
