- Preparing Medu Vada :
- First step is to wash urad dal properly. After washing, soak it for 4 to 5 hours. Grind and make a coarse batter, once the dal is properly soaked .
- In the batter, add ginger, green chilies, coriander, curry leaves, and salt .
- For frying, take a deep pan and heat oil in it . Shape the wadas and fry in the hot oil till golden brown color.
- Drain on paper tissues.
- Preparing Sambhar:
- Pressure cook toor dal with turmeric till soft. Mash well.
- Take a pan, heat oil and add mustard seeds, curry leaves and red chilies . Let them splutter.
- After that, add onions and fry till golden. Then add tomatoes, and drumsticks and cook.
- Add sambhar masala, salt, and cooked dal. Cook until all is cooked and everything comes together as one. Add tamarind pulp at the end.
- Assembling Sambhar Wada:
- Place hot wadas in a bowl.
- Pour hot sambhar over the wadas.
- Decorate with fresh coriander leaves.
