Sambhar Wada is one of the most loved South Indian delicacy. The crunchy wadas when absorb the spicy sambhar, developing a flavor explosion that is healthy and satisfying.

 Method:

  • Preparing Medu Vada :

  1. First step is to wash urad dal properly. After washing, soak it  for 4 to 5 hours. Grind and make a coarse batter, once the dal is properly soaked .   
  2. In the batter, add  ginger, green chilies, coriander, curry leaves, and salt .  
  3. For frying, take a deep pan and heat oil in it . Shape the wadas and fry in the hot oil till golden brown color.  
  4. Drain on paper tissues.  

  • Preparing Sambhar:  

  1. Pressure cook toor dal with turmeric till soft. Mash well.  
  2. Take a pan, heat oil and add mustard seeds, curry leaves and red chilies . Let them splutter.  
  3. After that, add onions and fry till golden. Then add tomatoes, and drumsticks and cook. 
  4. Add sambhar masala, salt, and cooked dal. Cook until all is cooked and everything comes together as one. Add tamarind pulp at the end.

  • Assembling Sambhar Wada: 

  1.  Place hot  wadas in a bowl.  
  2.  Pour hot sambhar over the wadas.  
  3.  Decorate with fresh coriander leaves.
