Til Barfi, also called sesame fudge, is a traditional Indian sweet made in festivals like Makar Sankranti and Lohri. This barfi is perfect sweet for simplicity and wholesome elements ,packed with the nuttiness of sesame seeds and the sweetness of jaggery , makes it a timeless festive treat.

Ingredients:

  • 1 cup white sesame seeds (Til)
  • 1 cup Jaggery
  • 2 tbsp ghee (clarified butter)
  • 2 tbsp chopped nuts (cashews, almonds, pistachios )
  • 1/2 tsp cardamom powder

Method:

  1. Roast seeds:
    • On the medium flame, heat a heavy bottom pan . Dry roast sesame seeds without any ghee until aromatic and golden. Remove and set aside.
  2. Prepare jaggery syrup:
    • Take the same pan ,heat some ghee in it . Add jaggery and stir till it melts completely. Cook until it reaches a one string consistency .
  3. Combine everything:
    • Add roasted sesame seeds, cardamom powder, and nuts into the jaggery syrup. Mix fast .
  4. Set the barfi:
    • Prepare a grease tray. Evenly pour the mixture on the greased tray . Flatten with a spatula.
  5. Cut and serve:
    • Once cooled, reduce into squares or diamonds. Allow to set absolutely earlier than serving.
