Mutton Beliram Curry is a dish named after Beliram, the renowned chef of Maharaja Ranjit Singh's royal kitchen. It is a dish which rich in history and flavor. This is a dish that changes a simple meal into a feast. It is prepared in whole spices, slow cooked in curd and ghee and is full of aroma.

- Marinate the Mutton
- First step is to prepare marinade. Take curd, ginger, garlic, coriander seeds, turmeric, red chilli powder and salt altogether in a bowl, mix to make marinade.
- Add mutton pieces this marinade into the and mix . Leave it at least 1 hour to absorb the flavors properly.
- Preparing the base
- Take a heavy bottom pan and heat ghee in it .
- Now, add the whole spices like bay leaves, cloves, cardamom, cinnamon ,black pepper and fry for few seconds.
- Cooking onion
- After the spices are fried, add chopped onion and fry until golden brown.
- After that add the marinated mutton .Cook on medium flame until the meat starts turning brown.
- Cooking the curry
- Add the remaining curd , stirring continuously to prevent curdling.
- Cover and cook on low flame until the mutton becomes soft and the ghee starts separating from the gravy.
- Final touch
- Taste the curry ,adjust salt and spice levels.
- Garnish with fresh coriander leaves.
