What Makes Indian Roast Chicken Special?
Unlike Western-style roast chicken is cooked with herbs and butter. On other hand Indian roasted chicken is all about spice layering. For marination we use thick paste of garam masala, paprika, turmeric, cardamom mingling with garlic, ginger, and lemon juice. As a result, it brings a flavorful roasted golden chicken.
Ingredients:
For the Marinade:
- 1 complete chicken (about 1.5-2 kg)
- 2 tbsp vegetable oil or melted ghee
- 1 tbsp garam masala
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp cardamom
- 1 tbsp crushed garlic
- 1 tbsp grated ginger
- 1 tsp sugar
- 1 lemon Juice
- Salt as per your taste
- Pepper as per your taste
Optional stuffing:
- Sliced onion
- Lemon wedges
- few cilantros or mint
Step by Step Instructions:
- Preparation of Chicken:
- Dry the whole chicken.
- Loosen the pores and skin lightly along with your hands to allow marinade .
- Preparation of marinade:
- Take oil, spices, garlic, ginger, sugar, lemon juice, salt, and pepper in a bowl and mix it together.
- Marinate:
- Rub the marinade all around the chicken, which include underneath the skin and within the cavity.
- Stuff the hollow space with onion, lemon, and herbs if using.
- Cover and refrigerate for at least 4 hours or in a single day for first-rate taste.
- Roast:
- Oven should Preheat to 200C.
- Place then marinated chicken on roasting pan. Roast it for at least 60–75 minutes, basting halfway .
- Check doneness: inner temperature need to reach 75C on the thickest element.
- Rest and serve:
- Take out chicken from oven and cool down it for 10–15 mins before carving.
- Serve it with cucumber raita or masala rice or with mint Chutney.
Tips and Variations:
- For spicier roasted chicken, you can add extra chili.
- To provide richer flavor apply melted butter.
- You can use grill for smoky flavor.
