
Introduction:
In Indian households, one conventional recipe that has stood the check of time is Panjeeri. Known for its immunity-boosting houses, this healthy mix of ghee-roasted flour, nuts, and spices isn't always only a sweet treat however also a herbal strength booster. Traditionally made for new moms and in the course of festivals, Panjeeri is a winter superfood that strengthens bones, aids digestion, and maintains the body relaxed from within. Ingredients:
- 2 cups entire wheat flour
- 1 cup powdered sugar (or jaggery powder)
- 1 cup ghee
- 1/2 cup almonds (chopped)
- 1/2 cup cashews (chopped)
- 1/4 cup pistachios (chopped)
- 1/4 cup walnuts
- 1/4 cup melon seeds
- 1/4 cup edible gum (gond)
- 1/4 cup desiccated coconut
- 2 tbsp poppy seeds
- 2 tbsp flax seeds
- 1 tsp cardamom powder
- Nutmeg powder - one pinch
Method:
- Take a heavy bottomed pan, heat ghee in it . Fry gum (gond) until it puffs up. Remove and crush fried gum.
- In the same ghee, roast flour on low flame till golden brown color and fragrant. This step is vital for the nutty taste.
- Now, add all nuts and seeds like chopped nuts, poppy seeds, melon seeds, , flax seeds, and desiccated coconut. Roast till they release aroma.
- Now, to sweeten , mix powdered sugar or jaggery, cardamom powder, and nutmeg. Stir to mix.
- Finally, add the crushed gond and mix the entire mixture.
- Allow the mixture to cool , then keep in an air proof box.
Serving Suggestions:
- Eat a spoonful of Panjeeri with warm milk for breakfast.
- Serve it as a festive sweet .
- Pack it in small jars as a thoughtful home made gift.
