Milk Cake Recipe - Indian Sweet

Milk Cake
Easy homemade Milk Cake recipe made by reducing milk, sugar, lemon juice, and ghee. Perfect grainy Indian fudge flavored with cardamom. Milk cake is an Indian sweet that is prepared by gradually  reducing the milk until it  fudge like grainy texture. These simple four-component sweet can deliver the taste of caramelize milk with cardamom. Perfect recipe for delicious and festive occasions or for everyday celebrations.

Components:

  • 1 liter full fat milk
  • 1/2 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons ghee
  • One Pinch of ground cardamom
  • 2 tablespoons chopped pistachio or nuts for decoration

Method:

  1. Take a small shallow dish or a heavy bottomed tray and grease it with a little ghee. Keep it aside.
  2. Take a big saucepan, pour the milk into it and boil over medium heat.
  3. Once the milk starts boiling, reduce the heat and add the lemon juice to curdle the milk and keep stirring .
  4. Keep cooking on low heat, stirring in between , until the mixture thickens and most of the liquid evaporates for about 30–35 minutes. Stir until the reduced milk starts to form solids.
  5. Now, add sugar, ghee and cardamom powder. Cook for another 5-7 minutes, until the mixture starts to leave the sides of the pan and create a thick mass.
  6. Transfer to the greased tray, spread and flatten with a spatula, and sprinkle the chopped nuts on top, gently press them.
  7. Allow it to cool to room temperature, then cover and refrigerate for 2–3 hours before slicing into diamond or square pieces.

Storage & Serving:

  • Store Milk Cake can be stored in an airtight container in the refrigerator for up to 5 days. 
  • Serve it with Chai or over the vanilla ice cream for different flavors and textures.
