Comfort in a Bowl: Khichdi Recipe

Khichdi is comfort served in a single bowl. This is a humble dish, the ultimate comfort food, prepared across India. Made with rice, dal and mild spices. khichdi is healthy, easy to digest food .

Components:

  • 1 cup rice (short grain preferred)
  • 1/2 cup moong beans (split the yellow lentils)
  • 1 medium onion, finely chopped
  • 1 medium tomato, chopped
  • 1-2 green chilies (optional, for seasoning)
  • 1 tsp ginger, grated
  • 1/2 teaspoon turmeric powder
  • 1 tsp cumin seeds
  • 2 tbsp ghee or oil
  • Salt to taste
  • 4 cups water
  • Coriander leaves Fresh

Method:

  1. First wash the moong dal and rice properly two to three times and soak them for 20 minutes.
  2. Take a pressure cooker , heat ghee in it. In this ,add cumin and let it brown a little.
  3. After this add ginger, onion and green chillies. Now cook it till it turn golden brown or ghee separated from onion.
  4. Add turmeric, tomatoes and salt. Cook till the tomatoes become soft.
  5. Now, add soaked rice and dal. Mix well .
  6. Pour in the water, stir, and bring to a boil.
  7. Cover and cook for 3-4 whistles .
  8. Once every thing cooked. Mash it a little for creamy look.
  9. Garnish it with freshly chopped coriander leaves .
  10. Khichdi tastes best when served hot with pickle or papad.
