
Khichdi is comfort served in a single bowl. This is a humble dish, the ultimate comfort food, prepared across India. Made with rice, dal and mild spices. khichdi is healthy, easy to digest food .
Components:
- 1 cup rice (short grain preferred)
- 1/2 cup moong beans (split the yellow lentils)
- 1 medium onion, finely chopped
- 1 medium tomato, chopped
- 1-2 green chilies (optional, for seasoning)
- 1 tsp ginger, grated
- 1/2 teaspoon turmeric powder
- 1 tsp cumin seeds
- 2 tbsp ghee or oil
- Salt to taste
- 4 cups water
- Coriander leaves Fresh
Method:
- First wash the moong dal and rice properly two to three times and soak them for 20 minutes.
- Take a pressure cooker , heat ghee in it. In this ,add cumin and let it brown a little.
- After this add ginger, onion and green chillies. Now cook it till it turn golden brown or ghee separated from onion.
- Add turmeric, tomatoes and salt. Cook till the tomatoes become soft.
- Now, add soaked rice and dal. Mix well .
- Pour in the water, stir, and bring to a boil.
- Cover and cook for 3-4 whistles .
- Once every thing cooked. Mash it a little for creamy look.
- Garnish it with freshly chopped coriander leaves .
- Khichdi tastes best when served hot with pickle or papad.
