Instructions:

  1. Dry Roast:  
    • Roast the chana dal, urad dal , and red chilies one by one in a pan till golden and aromatic. Roast the cumin seeds and sesame seeds gently as well.
  2. Grind:  
    • Once cooled, grind all the roasted components into a coarse powder. You can control the texture-a few prefer it coarser to feature a chunk of crunch.
  3. Season:  
    • Mix in salt to taste. Use this masala as a dip with  ghee along rice or as a flavorful condiment with idlis and dosas.

Tip: This mixture is flexible sprinkle it over steamed rice for a fast flavor enhance or mix with hot oil to create a savory chutney.
