 Method:

  1. Prepare the base:
    • Take a heavy bottomed pan and heat ghee in it . Add milk and stir constantly until hot.
  2. Add milk powder:
    • Add the milk powder slowly, once the milk is hot. Stir constantly , to ensure that no lumps are formed, until smooth and creamy.
  3. Sweeten :
    • Now, add sugar and keep mixing on low heat. Wait till the sugar dissolves completely in the milk powder.
  4. Flavoring:
    • For aroma and flavor, sprinkle cardamom powder and saffron strands .
  5. Cook to consistency:
    • Keep stirring till the mixture thickens and it will starts to leave the sides of the pan after some time.
  6. Set the barfi:
    • Once the mixture has formed into a dough like consistency. Grease a tray with little ghee and transfer the mixture on it. Press a little to set.
  7. Garnish:
    • Spread some chopped nuts on the mixture top and lightly press them .
  8. Cool and reduce:
    • Let it cool completely, then cut into shape of your choice.
