
Lauki Barfi is a traditional Indian mithai that converts a vegetable into a rich mithai. This sweet combines lauki with milk, sugar ,ghee, cardamom and garnished with nuts. Perfect for festivals or any other celebration.

Ingredients:
- 2 cups grated lauki
- 2 cups full cream milk
- 1 cup sugar
- 3 tbsp ghee
- 1/2 tsp cardamom powder
- 2 tbsp chopped cashews
- 2 tbsp chopped almonds
- 2 tbsp grated khoya
Method:
- Preparing Lauki
- Take a lauki, remove its skin, seeds, and grate the lauki. Remove all the extra water.
- Cook Lauki
- Heat ghee in a pan, add grated lauki, and sauté till its half cooked .
- Add Milk
- Add in milk and cook on medium flame until lauki softens and milk reduces.
- Sweeten
- Add sugar and stir continuously. The mixture will loosen after which thicken again.
- Flavor
- Add cardamom powder and khoya at this stage.
- Finish
- Add nuts, mix properly, and cook until the mixture leaves the edges of the pan.
- Set
- Transfer to a greased tray, flatten it on the top to even out, and garnish .
- Cut & Serve
- Once it is cool, cut into any shape of your choice and enjoy.
