- Preparing the Rice:
- Remove water from the soaked rice .Grind it into a rough paste with a little water in a grinder.
- Cook the Milk:
- Take a a heavy bottomed pan and boil milk in it .
- Slowly add the rice in the milk .To avoid lumps in phirni , keep stirring continuously.
- Sweeten and Flavor:
- Add sugar, after the mixture is thickened . Stir phirni until sugar is fully dissolved.
- For flavor ,add elaichi powder and for color add saffron milk .
- Finish and Chill:
- Keep cooking until the phirni reaches a creamy consistency.
- For a more traditional look, put phirni in earthen bowls .
- Garnish with chopped nuts and some saffron strands.
- Refrigerate for 2–3 hours earlier than serving.
