 Method:

  1. Preparing the Rice:
    • Remove water from the soaked rice .Grind it into a rough paste with a little water in a grinder.
  2. Cook the Milk:
    • Take a a heavy bottomed pan and boil milk in it .
    • Slowly add the rice in the milk .To avoid lumps in phirni , keep stirring continuously.
  3. Sweeten and Flavor:
    • Add sugar, after the mixture is thickened . Stir phirni until sugar is fully dissolved.
    • For flavor ,add elaichi powder and for color add saffron milk .
  4. Finish and Chill:
    • Keep cooking until the phirni reaches a creamy consistency.
    • For a more traditional look, put phirni in earthen bowls .
    • Garnish with chopped nuts and some saffron strands.
    • Refrigerate for 2–3 hours earlier than serving.
