Lauki/ Bottle Gourd Ki Kheer - A light, creamy dessert that is suitable for Navratri fasting or any festive occasion. This dish is simple, nutritious and absolutely divine.Lauki is transformed into creamy dessert in this simple pudding recipe. With no grains used, it is suitable for fasting days and you will also love its cooling, creamy texture.

Components:

  • 1 cup of grated lauki
  • 500 ml full fat milk
  • 2 tablespoons ghee
  • 1/4 cup sugar
  • 1/4 tsp cardamom powder
  • Some chopped nuts
  • 1 teaspoon raisins
  • A few strands of saffron (optional)
  • 1 teaspoon condensed milk (optional)

Instructions:

Step 1: Prepare Lauki

  • Peel the lauki and remove its skin. After that grate it using a fine grater. 
  • Squeeze out all excess water and keep aside

Step 2: Lauki cooking

  • Take a pan and heat ghee in it .
  •  Add the grated Lauki and roast for 5-7 minutes until it softened and the raw is not coming.

Step 3: Making the Kheer

  • Take full fat milk and add slowly to the same pan and bring to a boil.
  • Cook it on low heat for 15-20 minutes, sometimes stirring.
  • Add sugar, cardamom powder and saffron. Mix well.
  • Stir in condensed milk if using, and cook for another 5 minutes.

Step 4: Add dry fruits

  • In a separate pan, fry cashew nuts, nuts and raisins in one teaspoon ghee.
  • Add them to the kheer and mix. Your kheer is ready.

Serving instructions:

Serve decorated with chopped nuts . Perfect as dessert or prasad during Navratri.
