Gajar ka Halwa, also known as Carrot Halwa is an Indian dessert . Usually eaten in winters, this sweet dish combines grated carrots, milk, sugar, and ghee, slow-cooked to perfection. Garnished with nuts and flavored with cardamom, it’s a festive favorite.

Ingredients:
- 1 kg fresh carrots (grated)
- 1 liter full fat milk
- 4tbsp ghee (clarified butter)
- 2 hundred g sugar (alter to taste)
- 8-10 cashews (chopped)
- 8-10 almonds (sliced)
- 8-10 pistachios
- 4-5 cardamom pods (powdered)
- 2 tbsp raisins
Method:
- Preparing the carrots
- To remove dirt, wash the carrots properly . After that peel and coarsely grate the carrots .
- Cook with milk
- Take a heavy bottomed pan, add grated carrots and milk. Cook on medium flame till the milk reduces and the carrots melt.
- Ghee & sugar Adding
- After adding sugar and ghee in halwa and cook it till it becomes thick.
- Garnish
- Add cardamom powder, raisins, and nuts. Mix properly and cook for every other 2-3 minutes.
- Serve heat
- Garnish halwa with extra nuts and serve warm for the best taste.
