Kabuli Chana/Chickpeas Pulao

Method:

  1. Cook the chana :
    • Cook the soaked chana in a pressure cooker until soft . 
    • Drain the water and keep chana aside.
  2. Sauté :
    • Take a pan and heat ghee in it. Add all whole spices like bay leaves, cumin , cloves, cinnamon ,green elaichi and fry till golden color.
    •  Sauté onions, ginger paste ,garlic paste to the heated ghee.
  3. Masala base:
    • Take green chillies and tomatoes and add in the same pan. Cook until they are soft. 
    • Add dhaniya  powder, haldi, red chilli powder . 
    • Cook all this mixture until the oil separates from the masala.
  4. Add chana:
    • Mix in the cooked chana and let it cook in the masala for 2–3 minutes.
  5. Cook the rice:
    • Add the soaked rice and stir everything together. Add water cover and cook over medium heat until the rice is fluffy and soft .
  6. Finishing:
    • Sprinkle garam masala at the top . 
    • Decorate with fresh coriander leaves garnish, the greens look beautiful.

Serving Suggestions:

  • For a refreshing contrast, pair with cucumber raita or boondi raita.
  • For a traditional touch, serve with papad and pickles .
