Method:
- Cook the chana :
- Cook the soaked chana in a pressure cooker until soft .
- Drain the water and keep chana aside.
- Sauté :
- Take a pan and heat ghee in it. Add all whole spices like bay leaves, cumin , cloves, cinnamon ,green elaichi and fry till golden color.
- Sauté onions, ginger paste ,garlic paste to the heated ghee.
- Masala base:
- Take green chillies and tomatoes and add in the same pan. Cook until they are soft.
- Add dhaniya powder, haldi, red chilli powder .
- Cook all this mixture until the oil separates from the masala.
- Add chana:
- Mix in the cooked chana and let it cook in the masala for 2–3 minutes.
- Cook the rice:
- Add the soaked rice and stir everything together. Add water cover and cook over medium heat until the rice is fluffy and soft .
- Finishing:
- Sprinkle garam masala at the top .
- Decorate with fresh coriander leaves garnish, the greens look beautiful.
Serving Suggestions:
- For a refreshing contrast, pair with cucumber raita or boondi raita.
- For a traditional touch, serve with papad and pickles .
