Chicken Rogan Josh is a conventional Indian curry that’s rich, fragrant, and complete of flavor. Ingredients:
- 500 gm chicken
- 2 large onions, fine sliced
- 2 medium tomatoes, pureed
- 1 cup plain whisked yogurt or dahi
- 2 tbsp mustard oil
- 1 tbsp ghee (It is optional majorly used for richness)
- 1 tbsp Kashmiri chili powder
- 1 tsp turmeric powder
- 1 tsp cumin seeds
- 1 tsp fennel powder
- 1 tsp ginger powder
- 1 tsp coriander powder
- 2–3 green cardamoms
- 1 black cardamom
- 2–3 cloves
- 1-inch cinnamon stick
- 1 bay leaf
- Salt as per taste
- Coriander leaves
Method:
- For marination we need to take chicken and add yogurt, turmeric and salt. After adding all items mix it well. Wait for at least 20-30 minutes to let the chicken soak the flavor.
- In a pan heat the oil. In heated oil add cloves, cinnamon, cumin seeds, cardamoms, and bay leaf and cook it till you get fragrance.
- In above mixture add onions and cook it till it turns golden brown. In this add fennel, ginger, and coriander powder.
- Add tomatoes & chili powder. Cook till oil separates.
- Add chicken and stir well and cook for 5–7 mins.
- Take a cup of water and pour it. Lower the flame and wait for 25–30 minutes until chook.
- Add ghee and use chopped coriander for garnishing.
