- 2 cups all-purpose flour (maida)
- 1 cup ghee (clarified butter)
- 1 cup chilled water (or as needed)
- 1 cup sugar
- 1 cup water (for syrup)
- 1/2 tsp cardamom powder
- Saffron strands in very small quantity
- Almonds, pistachios fine chopped for garnish
- Silver leaf (varak) for decoration - optional
Method Of Preparation:
Step 1: Preparation of Sugar Syrup
- In a pan take sugar and water (1 cup each) and mix it well.
- Boil It, till it becomes sticky.
- Take saffron & cardamom seed powder, add it in sugar syrup.
Step 2: Preparing batter
- Add Ghee in a bowl and it mix it till it becomes fluffy and light.
- Slowly- Slowly pour cold water while stir it constantly.
- Now add flour and mix well until it becomes smooth, runny batter
Step 3: Preparation of Ghevar
- Heating ghee in a pan.
- Pour the batter in a thin circulate from a peak into the recent ghee.
- The batter will unfold and shape a internet-like disc.
- Fry, till it turns golden and crisp. Carefully take it out and drain extra the oil.
Step 4: Soaking and Garnishing
- Dip the ghevar into warm sugar syrup.
