
A traditional Bihari sweet in Chhath Puja- Thekua. This sweet is meagerly eaten in Bihar, Jharkhand, and Uttar Pradesh region. This is especially prepared during Chhath Puja. It is a golden, crunchy cookies made with whole wheat flour, jaggery, and ghee, and are deep fried to perfection. With hint of cardamom and dry coconut, Thekua isn't only a prasad-it’s a nostalgic chunk of historical past.
Ingredients:
- 2 cups whole wheat flour
- 1 cup jaggery
- 4–5 tbsp ghee
- 1/4 cup grated dry coconut
- 1/2 tsp elaichi powder
- Water
- Oil- used for deep frying
Instructions:
- Mix jaggery and small quantity of warm water in a bowl to make sweet water.
- In sweet water, add wheat flour, elaichi powder, grated coconut, and ghee.
- Make a dough and keep it aside for 10–15 minutes.
- Shape into small circular or in traditional style.
- In a pan heat the oil in a medium flame till it turns golden brown.
- Store it in a container to make it cool.
