- Dry roasting the spices:
- Take a pan, Keep the flame on low heat . Dry roast all the whole spices like cumin, fennel , coriander, peppercorns, cloves, cinnamon and cardamom .
- Cool down:
- Allow roasted spices to cool down.
- Grind into powder:
- Add the cooled spices along with Kashmiri red chillies and dry ginger powder to the grinder. Grind them into a fine powder using grinder.
- Add nutmeg:
- For a warm, sweet note, mix in freshly grated nutmeg .
- Store properly:
- Store in an jar in a dry area. Stays fresh for 2 months.

- To avoid bitterness, always roast on low flame .
- To maintain freshness, grind in small batches.
