    Instructions:

  1. Dry roasting the spices:
    1. Take a pan, Keep the flame on low heat . Dry roast all the whole spices like cumin, fennel , coriander, peppercorns, cloves, cinnamon and cardamom .
  2. Cool down:
    1. Allow roasted spices to cool down.
  3. Grind into powder:
    1. Add the cooled spices along with Kashmiri red chillies and dry ginger powder to the grinder. Grind them into a fine powder using grinder.
  4. Add nutmeg:
    1. For a warm, sweet note, mix in freshly grated nutmeg .
  5. Store properly:
    1. Store in an jar in a dry area. Stays fresh for 2 months.

  • For color without much heat, use kashmiri chillies .
  • To avoid bitterness, always roast on low flame .
  • To maintain freshness, grind in small batches.
  • For a rich aroma, add a pinch to curries, marinades, biryani and tandoori dishes .
