Veggie masala pasta recipe (Indian style)

Comfort-food meets spice-market. This Indo-Italian fusion dish layer the pasta in juicy onion-tomato gravy with some Indian spices and loaded with vegetables .It is a type of meal for of, lunch box, weekends or a home-like bowl-no matter where you are.

Components:

For Pasta:

  • Pasta: 300g
  • Salt: 1 tsp
  • Oil: 1 tsp
  • Water for boiling pasta
  • Vegetables:
  • Onion: 1 medium, finely chopped
  • Tomatoes: 3 medium or 1 cup of tomato puree
  • Capsicum: 1 small
  • Carrot: 1 small, diced
  • Green peas: 1/2 cup
  • Corn: 1/3 cup

Spices and Aromatics:

  • Cumin : 1/2 tsp
  • Turmeric powder: 1/4 tsp
  • Red chilli powder: 1 tsp
  • Dhaniya Powder: 1 tsp
  • Garam Masala: 1/2–3/4 tsp
  • Kasuri Methi : 1 tsp
  • Black Pepper: 1/4 tsp
  • Salt: to taste
  • Ginger: a small piece
  • Garlic: 4
  • Chili (Green): 1

Other ingredients:

  • Oil: 2 tablespoons
  • Butter : 1 teaspoon
  • Tomato Ketchup : 1-2 tablespoons
  • Reserved pasta water: 1/2 cups
  • Fresh coriander: 2 tablespoons
  • Cheese: 2–3 tablespoons

Method:

  1. Boil Pasta:
    • Bring a large amount of salted water to the rolling boil. Add pasta and cook until El Dente. Reserve 3/4 cup pasta water, drain and place aside.
  2. Make Tempering:
    • Heat the oil and butter in a large pan. Add cumin; Let them crack.
  3. Sauté the aromatics:
    • After the above step, add the chopped onion with a pinch of salt. Cook until translucent and add a little pasta water. Stir in ginger, garlic and green chillies. Stir until aromatic.
  4. Cook Tomatoes:
    • Add tomatoes (or puree). Cook on medium heat until cooked .
  5. Spices:
    • After cooking tomatoes add turmeric, chilli, coriander powder, black pepper and salt . Cook it for 30-45 seconds until aromatic.
  6. Add Vegetables:
    • Add capsicum, carrots, peas and corn and cook it for 2-3 minutes.
  7. Make it Saucy:
    • Add ketchup and 1/2 cup pasta water and cook it slowly for 2 minutes until the sauce is silky and stick to a spoon.
  8. Finish the Taste:
    • Add Kasuri methi and add garam masala to finish. Taste and adjust the salt.
  9. Decorate and Serve:
    • Stir in cream or cheese . Finish with coriander. Serve hot.
