Shaam Savera Kofta
Shaam Savera kofta (no onion garlic)-visually spectacular and satvik dish for any festive occasion. It contains vibrant spinach-paneer kofta in the creamy tomato base, all without onions or garlic.

Components:

For Koftas:

  • 2 cups spinach leaves (blanched and finely chopped)
  • 1 cup of paneer
  • 2 tablespoons boiled mashed potatoes
  • 1 green chilli (finely chopped)
  • 1 tsp ginger paste
  • 2 tablespoons Vrat ka Atta (for binding)
  • Salt to taste
  • Ghee or oil for shallow frying

For Tomato Gravy:

  • 4 medium tomatoes
  • 1 tsp grated ginger
  • 2 green chilies
  • 1/2 tsp cumin
  • 1/2 tsp Sendha Namak (Rock Salt)
  • 1/2 tsp Black pepper
  • 1/2 tsp Sugar (optional)
  • 1/4 cup fresh cream or coconut cream
  • 1 tablespoon ghee

Instructions:

First Step :

Prepare Koftas

  1. Take a bowl, mix chopped spinach, green chili, ginger paste, salt and flour. This creates an outer layer.
  2. In the second bowl, add the paneer and mashed potatoes with a pinch of salt and black pepper.
  3. Take a small piece of spinach mixture, flatten it and place one teaspoon paneer mixture inside. Seal and shape in round Koftas.
  4. Fry the shallow Koftas in the ghee until golden and crisp. Set one side.

Second Step :

Make Gravy

  1. Heat ghee in a pan. Add cumin and let them burst.
  2. Add ginger and green chillies, stirring shortly.
  3. Pour in the tomato puree and cook until it is thickened and cooked.
  4. Add the salt, pepper, sugar and cream. Simmer for 5 minutes.

Third Step:

Assemble

  1. The serving dish, pour the hot gravy into it .
  2. Put the kofta on the top .
  3. Garnish with cream and fresh coriander leaves.

Serving Tip:

Enjoy with samak chawal, kuttu paratha, or fruit chaat on the side.
