Quick and Easy Bread Kachori

Crunchy bread kachori recipe-quick Indian snack made with bread slices and spicy moong dal filling. Perfect for teatime! Easy, no-fuss, vegetarian.

Bread Kachori

Introduction:

Transfer the pieces of normal bread into crispy, Luchnowi  Golden kachori in less than 30 minutes. This fast bread  Kachoris is made from  store-bought bread,  without compromising on flaky layers or spice filling. Suitable for a busy morning, children's lunchbox or tea parties, it deliver all the delicious satisfaction of the classic kachori with very low prep time.  

 Ingredients:

  • 8 slices white or whole whole sandwich bread 
  • 1 cup of cooked yellow moong lentils 
  • 1 teaspoon oil  
  • 1 teaspoon cumin  
  • 1/2 teaspoon fennel seeds  
  • 1/2 teaspoon Asafoetida (Hing)  
  • 1 teaspoon ginger chili paste  
  • 1 teaspoon coriander powder  
  • 1/2 teaspoon red chilli  powder  
  • 1/2 teaspoon garam masala
  • Salt, to taste  
  • 2 tablespoons fresh coriander chopped  
  • 2–3 tablespoons water   
  • Oil for shallow frying  

Method:

  1. Prepare Filling:  
    1. Heat the oil in pan on medium heat. Add cumin, fennel seeds and asafoetida . Let them sizzle for 10 seconds.  
    2. Stir in the paste of ginger chilli and stir until the raw aroma disappears. Add cooked lentils, coriander powder, cayenne powder, garam spices and salt.  
    3. Cook for 3-4 minutes, stir constantly. Mash lightly, add enough water to bring the chopped coriander and mix together. Remove from heat and cool
  2. Combine the Kachoris : 
    1. Circle each piece of bread in a circle using a 3 inch cookie cutter or a small bowl. Gently flatten each disk with a rolling pin.  
    2. Spoon 1-2 tablespoons of filling on half of the bread disc . Fold the other half and press the edge firmly with a fork to seal.  
  3. Fry up to Golden : 
    1. Take a nonstick pan and heat  oil on medium heat.  
    2. Place the raw kachori and fry for 2-3 minutes per side, pressing gently with a spatula, until crisp and golden brown. Drain on a paper towel.

 Serving Instructions:

Serve it hot with  with tamarind date chutney, mint coriander chutney. Pair with masala chai for breakfast or pack them in the lunchbox .  

 Tips and Variations:

  •  For a healthy version, brush the kachoris with some  oil and bake at 200 ° C for 15-20 minutes.
  •  Swap the lentils filling with  the mashed spice potatoes or cheese.
  •  Use multigrain or gluten free bread corresponding to the requirements of the diet.  
  •  Make sure the filling is not too moist, or the bread disc can tear.
