Ingredients:
- 6 pieces sandwich bread (white or whole wheat)
- 1/2 cup grated carrot, slightly strained
- 2 tablespoons roasted red bell pepper puree
- 2 tablespoons cream cheese or spreadable cheese
- 4 tablespoons hung yogurt or Greek yogurt
- 1 small garlic cloves, minced
- 1 cup fresh spinach leaves
- 2 tablespoons fresh coriander leaves
- 1 tablespoon lemon juice
- Salt and black pepper, to taste

Method:
- Prepare orange spread:
- In a bowl, mash the carrots with a bell pepper puree.
- Season with salt and pepper, then put aside.
- Make white layers:
- Combine cream cheese, hung yogurt and minced garlic.
- Add salt and pepper.
- Mix green paste:
- Blend spinach, coriander, lemon juice, salt and splash of water in coarse paste.
- Adjust salt and consistency if required.
- Assemble the sandwich:
- Take a slice of bread.
- On one piece, spread the carrot mix.
- On the other , level the garlic curd mixture.
- On the final , spread the spinach pesto.
- Stack and Cut:
- Place the simple sides of the bread together: orange at the bottom, white in the middle, green on top.
- Press and trim crusts gently.
- Cut into triangles or fingers.
