  • Ginger-garlic paste: 1 tablespoon

  • Garam Masala: 1/2 teaspoon
  • Salt: to taste
  • Fresh coriander leaves: 2-3 tablespoons, chopped (for decoration)

Instructions:

  1. Prepare paneer:  
    • Begin by slightly crumble using your hands.  This helps create a pleasant texture and allows the paneer to be soft without becoming mushy.
  2. Sauté Aromatics:  
    • In a nonstick  skillet, heat the oil (or ghee) on medium heat.
    • Add cumin seeds and wait for them to spluter.
    • Add  in finely chopped onion and stir until they a slightly golden, which should take about 3-4 minutes.
  3. Make Masala base:  
    • Add ginger garlic paste and chopped green chillies. Stir the mixture until the raw aroma is dispersed.
    • Insert chopped tomatoes and a pinch of salt so they get softened. Cook this mixture on a medium flame for 2 minutes until it become soft.
    • After that add spices like  turmeric powder, red chilli powder and coriander powder. Stir for 1 minute so that the spices completely release their aroma.
  4. Combine paneer:  
    • Add the crushed paneer to the spices. Mix it gently so that the cheese absorbs the flavors without overcooking.
    • Let it cook for 23 minutes on  low to  medium heat . Avoid overcooking, as extended heat can make paneer rubbery.
    • Sprinkle in garam masala (pav bhaji masala, if used) and fold it gently by mixing.
  5. Finish touch:  
    • Check for seasoning if necessary and set salt.
    • Finally, stir in freshly chopped coriander to finish the dish
