Ingredients:

Raw mango: 500 grams 

Water: About 4 cups (extra to adjust consistency)

Sugar: 1 cup (adjusted to taste

Salt: 1 teaspoon 

Black Salt (Kala Namak): 1 teaspoon

Roasted cumin powder: 1 tablespoon

Chaat Masala: 1 teaspoon (optional)

Fresh mint leaves: Few

Ginger: 1 inch part (optional)

Ice Cubes: As per requirement

Instructions:

  1. Prepare mango:
    • Wash and cook: Rinse raw mangoes well. For a soft, smooth pulp, put the mango in a pressure cooker with 2 cups of water. Cook on medium heat for 1 whistle. Remove and let cool.
    • Peel and extract: Once cooled, peel the skin (if the roasted method is used) and remove pulp with a spoon. Alternatively, you can directly mash the mango if they are soft enough.
  2. Mix the pulp:
    • Transfer the mango pulp to the blender. Add chopped mint leaves and, if using, peeled ginger.
    •  Mix until you achieve a simple, uniform consistency. If necessary, add some water to help the mixture soften.
  3. Prepare a sweet-spice mixture:
    • Take a large mixing bowl or saucepan, combine mango puree with sugar, regular salt, black salt, roasted cumin powder and chaat masala. 
    • Stir well until the sugar is completely dissolved. For a slightly different taste, you can relax the mixture for 10-15 minutes so that the spice enters the pulp.
  4. Thin and adjust:
    • Slowly add 4 cups of water to the spicy mango mixture. 
    • Stir well, taste, and adjust the sweetness as needed. If you prefer a light drink you can always add more water.
  5. Cool and serve:
    • Refrigerate the panna for at least 2-3 hours. 
    • Decorate with a few fresh mint sprigs for cold servings, aroma and additional explosions of fragrance, aroma ,add in glasses with ice cubes.
