Ingredients

  • Bhindi (Okra): 250 grams  
  • Oil:  3 tablespoons  
  • Cumin seeds: 1 tablespoon
  • Onion: 1 cup, thin slices
  • Green chili: 1
  • Ginger garlic paste: 1 tablespoon
  • Tomatoes: 1 cup, chopped  
  • Turmeric powder: 1 teaspoon
  • Red chili powder: 1 tablespoon  
  • Coriander powder: 1 tablespoon
  • Garam masala: 1 teaspoon
  • Salt: to taste
  • Fresh coriander leaves: 2 tablespoons, chopped

Instructions

  1. Prepare the Bhindi:  
    • For preparing bhindi,first rinse the bhindi in water.Then dry them completely with a clean kitchen towel. 
    • Removing excessive moisture prevents the bhindi from becoming slimy. Trim the ends and slice the soaked into about 1 inch of pieces.
  2.  Pre-Cook Bhindi 
    • In a non-stick pan, heat 2 tablespoons of oil on medium-high heat.   Add the chopped bhindi and stirring for 5-7 minutes, sometimes stirring until they start to become crisp and start to lose their thin texture.  
    • Transfer the bhindi in a plate and place it on the side.
  3. Prepare the spice base:  
    • In the same pan, add 1 tablespoon of oil. Once the oil is heated, add cumin and let them crack for a few seconds.   
    • Add sliced ​​onion and sliced ​​green chillies. Bake onions until soft and slightly golden.   Stir in ginger garlic paste and cook for about 1 minute until aromatic.
  4. Make tomato masala:  
    • Now, add the chopped tomatoes with a pinch of salt, turmeric powder, red chilli powder and coriander powder. 
    • Cook the mixture over medium heat until the tomatoes are soft, and the oil starts to separate with spices .
  5. Gather and simmer:  
    • Place the pre -cooked bhindi to the pan. Mix  bhindi properly with the spices is evenly coated with spices.   Reduce the heat, cover the pan with a pan, and let it simmer for some minutes. This allows Bhindi to absorb flavors while the rest of the tender is still crisp.
    • After simmer, sprinkle garam spices on the dish, stir gently and cook for extra minutes.
  6. Decoration and serving :  
    • Now,take some freshly chopped coriander leaves and garnish the preparation. 
    • Serve  with roti , paratha or with a bowl of boiled rice.
