
Handvo is a traditional Gujarati savory breakfast made from rice, lentils, and greens. It’s lightly spiced, fermented, and baked , offering a wholesome snack or light meal.

- Soak and grind
- Soak rice and lentils for six–eight hours. Drain and grind coarsely with yogurt to make a thick batter.
- Ferment
- Ferment the batter overnight or for 6–8 hours .
- Mix vegetables and spices
- Now, time to mix vegetables and spices. Add bottle gourd, ginger paste, chili paste, turmeric, chili , coriander , and salt.
- Prepare tempering
- Now, prepare tadka. Heat oil, add mustard and sesame . Pour over the batter and mix.
- Add baking soda
- Now, add baking soda. Stir in baking soda before baking .
- Bake
- Pour batter into a greased baking tin. Bake at 180°C for 35–40 mins till golden brown and organization.
- Cool and serve
- Cool , cut into squares, and serve heat with green chutney.
