Soya Pulao – Protein Rich One-Pot Recipe

As we all know high protein vegetarian meal suitable for lunchbox, festive spread or cozy dinner , Soya pulao is one of the best option. Soya pulao is the best combination of basmati rice, vegetables and spices to bring the best nutrition value.

Ingredients:

  • 1 cup basmati rice
  • 1 cup of soya chunks
  • 1 medium onion, sliced
  • 1 tomato, chopped
  • 1 green chilli, incision
  • 1 tsp ginger garlic paste
  • 1/2 cup mixed vegetables
  • 2 tablespoons of oil or ghee
  • 1 tsp cumin
  • 1 bay leaf
  • 2 cloves
  • 1 small cinnamon stick
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1 tsp of coriander powder
  • Salt to taste
  • 2 cups of water
  • Fresh coriander leaves for decoration

Method:

  1. Take a pan and add soya chunks ,salt. Boil for 5 minutes. Drain, rinse excess water.
  2. Now add spices like cumin, bay leaf, cloves and cinnamon in a pane having heated oil or ghee.
  3. After adding spices add sliced onions and cook it until it turns golden brown. Now, add ginger garlic paste and green chillies.
  4. Add tomatoes and cook until it turns soft. In tomato paste add turmeric, coriander powder and garam masala.
  5. Now, mix in vegetables and soaked rice. Stir gently.
  6. Add prepared soya chunks.
  7. Cover the pan and cook it on low flame for 15–20 minutes till turns fluffy and water is absorbed.
  8. Add fresh coriander and serve hot with raita or pickle.

Serving Tip:

Plate it in a copper bowl or banana leafy bowl for a festive flare. Add Boondi Raita and papad for the full thali experience.
