
As we all know high protein vegetarian meal suitable for lunchbox, festive spread or cozy dinner , Soya pulao is one of the best option. Soya pulao is the best combination of basmati rice, vegetables and spices to bring the best nutrition value.
Ingredients:
- 1 cup basmati rice
- 1 cup of soya chunks
- 1 medium onion, sliced
- 1 tomato, chopped
- 1 green chilli, incision
- 1 tsp ginger garlic paste
- 1/2 cup mixed vegetables
- 2 tablespoons of oil or ghee
- 1 tsp cumin
- 1 bay leaf
- 2 cloves
- 1 small cinnamon stick
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1 tsp of coriander powder
- Salt to taste
- 2 cups of water
- Fresh coriander leaves for decoration
Method:
- Take a pan and add soya chunks ,salt. Boil for 5 minutes. Drain, rinse excess water.
- Now add spices like cumin, bay leaf, cloves and cinnamon in a pane having heated oil or ghee.
- After adding spices add sliced onions and cook it until it turns golden brown. Now, add ginger garlic paste and green chillies.
- Add tomatoes and cook until it turns soft. In tomato paste add turmeric, coriander powder and garam masala.
- Now, mix in vegetables and soaked rice. Stir gently.
- Add prepared soya chunks.
- Cover the pan and cook it on low flame for 15–20 minutes till turns fluffy and water is absorbed.
- Add fresh coriander and serve hot with raita or pickle.
