The ultimate Indian street food experience - Bhajiya platter. A combination of crispy pakoras made with potatoes, onions, paneer , chickpea flour and spices. Perfect starter for a monsoon evening, festive gathering.

Method:

  1. Preparing the batter
    • Prepare a besan batter first , to make crispy bhajia. In a bowl and take gram flour, rice flour, ajwain, haldi, chili powder, coriander powder and salt. 
    • Mix all together. Add water and make a smooth thick batter.
  2. Heating the oil
    • Take a pan, pour enough oil in it. Heat it on medium flame.
  3. Dip and fry
    • Take potato , onion , spinach , cauliflower and green chilies ,dip in batter one by one and fry them. 
    • Fry until pakores till golden and crispy.
  4. Drain and serve
    • Remove on a paper towel to absorb excess oil.
    • For serving you can use chutney, ketchup and don't forgot to serve it hot.

Serving Suggestions:

Arrange different bhajiya in a plate with lemon khichdi and chutney.
For the ultimate monsoon vibe, pair with masala chai .
Garnish with chopped coriander and sprinkle with chaat masala for extra zing.
