
Maharashtrian Spice Bhat - a spiced rice dish that is bold, aromatic and in a tradition. Suitable for a festive spread or cozy family dinner, this is a pot of wonder ,the celebration of goda masala and seasonal vegetables.
This rustic rice dish is influenced by the warmth of Goda masala , a signature mixture that separates it from other rice preparations. It is heartfelt, vegan friendly and prepared inless than 30 minutes!
Components:
- Rice -1 cups
- Oil or ghee - 3 tablespoons
- Whole spices:(Bay leaf, cinnamon, cardamom, cloves, mustard seeds, cumin seeds)
- Asafoetida - a pinch
- Curry leaves - a few
- Cashew - 2 tablespoons
- Onion - 1/2, sliced
- Green chili - 2
- Ginger - 1 inch, grated
- Turmeric powder - 1/2 tsp
- Red Chilli powder - 1 tsp
- Goda Masala - 1 teaspoon
- Garam Masala- 1 teaspoon
- Vegetables: Tindora (Ivy Gourd), Brinjal, Peas, Potato
- Salt and jaggery- to taste
- Water - 3 cups
- Fresh coconut and coriander - for garnish
Method:
- Heat the oil in a pan. Add the whole spices and let them crackle.
- Add Cashew, curry leaves, onions, chillies and ginger. Stir until aromatic.
- Add turmeric, chili powder, garam masala and goda masala . Stir well.
- Mix in chopped vegetables and fry for few minutes.
- Add soaked rice, salt, jaggery and water. Cook until the rice is fluffy and cooked.
- Decorate with grated coconut and fresh coriander garnish .
