
This Satvik Mix veg sabzi is a beautiful mixture of seasonal vegetables, gently spicy and cooked in ghee or cold pressed oil. Ingredients:
- 1/2 cup diced potatoes
- 1/2 cup of cauliflower florets
- 1/2 cup chopped carrots
- 1/2 cup chopped beans
- 1/2 cup green peas
- 1/2 cup chopped capsicum
- 1/2 cup chopped spinach or fenugreek leaves
- 1/2 cup pumpkin
- 1 teaspoon ghee or cold pressed oil
- 1 tsp cumin
- 1/2 tsp grated ginger
- 2 green chilies
- 1/2 tsp turmeric powder
- 1/2 tsp coriander powder
- Salt to taste
- Fresh coriander leaves for decoration
- Half lemon juice
Method:
1. Prep and Steam: Steam the vegetables a little until tender.2. Spices: Heat ghee in a pan. Add cumin and let them crack. Add ginger and green chillies, stirring .
3 Veggies: Add steamed vegetables, capsicum and spinach. Mix everything together.
4. Cook: Cook the vegetables until soft for 5-7 minutes.
5. Garnish: Garnish with fresh coriander leaves and add lemon juice .
