Aromatic Mix Veg Curry

Mix Veg

 Ingredients:

For the tempering:

  • 2 tbsp vegetable oil  
  • 1/2 tsp cumin seeds

Aromatics:

  •    1 medium onion, finely chopped  
  •    1 tbsp ginger garlic paste  
  •    1-2 green chilies, slit 

Spices:

  • 1/4 tsp turmeric powder  
  • 1/2 tsp red chili powder  
  • 1 tsp coriander powder  
  • 1/2 tsp garam masala

Vegetables:

  • 1 medium potato 
  • 1 cup cauliflower   
  • 1 medium carrot  
  • 1 cup green beans  
  • 1/2 cup green peas  
  • 1 bell pepper (any colour)

Other:

  • 1 medium tomato, chopped  
  • Salt, to taste  
  • Water as needed  
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare the base:  
    • Heat the vegetable oil on medium heat, in a deep jar, heavy bottomed pan. 
    • Once heated, add in cumin seeds . 
  2. Sauté aromatics:  
    • Now, add the chopped onions to the pan .Fry until it is soft and golden.
    •  Stir in ginger garlic paste and green chillies, cook the mixture for another 1-2 minutes until the raw odor is removed.
  3. Make spices:  
    • Mix the chopped tomato and a pinch of salt. Allow it to cook until the tomato is soft and mix with onions. 
    • Now, add turmeric, red chilli and coriander powder. Stir well.
  4.  Add vegetables:  
    • Gently mix cube potatoes, cauliflower florets, carrots pieces and green beans. Just pour enough water to cover the vegetables.
    •  Simmer the mixture and increase the heat to cover the pan. Let this hearty vegetables cook for about 15-20 minutes until they are tender.
  5. Final touch:  
    • Once the vegetables come close to perfection, stir in the peas and chopped bell pepper. 
    • Cover and simmer for an extra 5 minutes. 
    • Sprinkle garam spices on top, mix well and adjust salt if needed.
  6. Decoration and serving:  
    • Turn off the heat and garnish with fresh chopped cilantro. 
    • Serve hot with  boiled rice, soft parathas .

 Tips and variety:

  • Uniform cooking: For even  cooking,  cut all vegetables in the same size.
  • Additional Vegetarian Thoughts: Try adding corn kernels or a handful of spinach for the extra color and nutritional punch.
  • Protein Boost: Toss in paneer Cubes.
