Aromatic Mix Veg Curry

Ingredients:
For the tempering:
- 2 tbsp vegetable oil
- 1/2 tsp cumin seeds
Aromatics:
- 1 medium onion, finely chopped
- 1 tbsp ginger garlic paste
- 1-2 green chilies, slit
Spices:
- 1/4 tsp turmeric powder
- 1/2 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
Vegetables:
- 1 medium potato
- 1 cup cauliflower
- 1 medium carrot
- 1 cup green beans
- 1/2 cup green peas
- 1 bell pepper (any colour)
Other:
- 1 medium tomato, chopped
- Salt, to taste
- Water as needed
- Fresh cilantro, chopped (for garnish)
Instructions
- Prepare the base:
- Heat the vegetable oil on medium heat, in a deep jar, heavy bottomed pan.
- Once heated, add in cumin seeds .
- Sauté aromatics:
- Now, add the chopped onions to the pan .Fry until it is soft and golden.
- Stir in ginger garlic paste and green chillies, cook the mixture for another 1-2 minutes until the raw odor is removed.
- Make spices:
- Mix the chopped tomato and a pinch of salt. Allow it to cook until the tomato is soft and mix with onions.
- Now, add turmeric, red chilli and coriander powder. Stir well.
- Add vegetables:
- Gently mix cube potatoes, cauliflower florets, carrots pieces and green beans. Just pour enough water to cover the vegetables.
- Simmer the mixture and increase the heat to cover the pan. Let this hearty vegetables cook for about 15-20 minutes until they are tender.
- Final touch:
- Once the vegetables come close to perfection, stir in the peas and chopped bell pepper.
- Cover and simmer for an extra 5 minutes.
- Sprinkle garam spices on top, mix well and adjust salt if needed.
- Decoration and serving:
- Turn off the heat and garnish with fresh chopped cilantro.
- Serve hot with boiled rice, soft parathas .
Tips and variety:
- Uniform cooking: For even cooking, cut all vegetables in the same size.
- Additional Vegetarian Thoughts: Try adding corn kernels or a handful of spinach for the extra color and nutritional punch.
