  • Cabbage: 1 cup  
  • Carrot: 1 medium  
  • Onion: half of cup, finely chopped  
  • Bell Pepper : 1/2 cup, diced  
  • Green Beans : 1/2 cup, chopped into small 
  • Spring Onions: 2–3, finely chopped  
  • Garlic: 2 cloves, minced  
  • Ginger: 1 teaspoon, grated  
  • Salt & Black Pepper: To flavor  
  • Oil: 1 tablespoon (for sautéing)

 For the Spicy Tomato Chutney:

  • Tomatoes: 3 medium   
  • Dried Red Chillies: 4–5   
  • Garlic: 3-4 cloves  
  • Ginger: 1/2-inch piece   
  • Sugar: half teaspoon  
  • Salt: To flavor  
  • Vinegar: 1 teaspoon (or a squeeze of lemon juice )  
  • Fresh Coriander: A small handful 

Directions:

  1. Prepare the dough;
    • In a large bowl, combine maida, salt and oil. Add warm water and prepare a soft dough.  
    • Now place the dough in a bowl and cover it with a wet cloth and wait for at least 20-30 minutes. Wait till the dough becomes elastic and easy to roll out.
  2. Make the filling:
    • Oil: On medium flame add 1 tbsp oil in a pan.
    • Aromatics. Add minced garlic and grated ginger; Stir until aromatic.  
    • Cook the vegetables: Cook chopped onion and until it turns soft. Spread the sliced ​​cabbage, carrots, bell peppers and beans. Fry for few minutes .  
    • Season: Add some salt and black pepper. Also, mix in the chopped spring onion. Allow the filling to cool completely.
  3.  Momos shape;
    • Divide the dough: Divide the rested dough into a small ball .

    • Mix: In blender, combine tomatoes, dried red chillies, garlic cloves, ginger, sugar, salt and vinegar. Mix until smooth, slightly thick paste forms. Taste and adjust the seasoning as needed.
