Introduction:
Poha is a beloved staple in lots of Indian households-a flattened rice dish it's both satisfying and clean on the stomach. With a notable stability of tangy, spicy, and savory notes, poha makes for a really perfect morning treat or a light meal any time of day.
Ingredients:
- 2 cups flattened rice (poha): Rinsed
- 1 medium onion, finely chopped
- 1-2 green chilies, slit or chopped
- 1/2 cup boiled potatoes, diced
- 1/4 cup peanuts: Roasted for crunch
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- some curry leaves
- Salt, to flavor
- 1 tbsp oil
- Juice of one lemon
- Fresh coriander, chopped (for garnish)
Instructions:
- Preparing the Poha: Gently rinse the flattened rice in water. Let it stand for five mins, then drain any extra water carefully.
- Seasoning: Now,in a huge pan, heat the oil over medium heat. Add the mustard seeds and let it crackle. Toss the curry leaves and peanuts, stirring till the peanuts are crisp.
- Sauté the Aromatics: Add the chopped onions and green chilies. Sauté till the onions are soft .
- Add the Spices & Potatoes: Mix the turmeric powder and salt. Add some boiled potatoes and lightly stir to coat them with the spices.
- Combine Poha: Lower the heat and add the poha and mix well so that each grain is infused with the aromatic spice combination.
- Finish with Zest: Squeeze in the lemon juice and mix . Garnish the poha with coriander and serve hot.
