Hearty Indian Mutton Curry

 Ingredients

For the Marinade:  

  •  1kg mutton  
  •  1 tablespoon ginger garlic paste  
  •  1 teaspoon turmeric powder  
  •  Salt, to flavor  
  •  1/2 cup yogurt  

For the Gravy:  

  •  2–3 tablespoons ghee or oil  
  •  1 big onion, thinly sliced  
  •  2 teaspoons ginger garlic paste  
  •  2 green chilies, slit or finely chopped  
  •  1 teaspoon cumin seeds  
  •  1 bay leaf  
  •  2 green cardamom pods  
  •  3-4 cloves  
  •  1 small cinnamon stick  
  •  3 large tomatoes, pureed or finely chopped  
  •  1 teaspoon red chili powder 
  •  1 teaspoon coriander powder  
  •  1/2  teaspoon cumin powder  
  •  1/2teaspoon garam masala  
  •  Freshly floor black pepper, to flavor  
  •  Water (as needed)  
  •  Fresh coriander leaves, chopped (for garnish)

Method

  • Marinate the Mutton:  
    • In a big bowl, mix the mutton chunks with ginger garlic paste, turmeric, salt, and yogurt. 
    • Cover and allow the mutton marinate for as a minimum 1 hour in the refrigerator, marination works even better to tenderize the mutton and deepen the flavors.
  1. Prepare the Spiced Base:  
    • Now, heat ghee (or oil) in a heavy bottomed pot or deep pan over medium warmth. 
    • Add cumin seeds, bay leaf, cardamom pods, cloves, and cinnamon stick. Sauté for a minute till the spices launch their aroma. Then add the onion slices and cook  until they turn a gentle golden brown.

    • Cook the tomato onion masala until the oil starts  to split from the masala.
  3. Combine and Simmer:  
    • Gently add the marinated mutton (along side any marinade left within the bowl) to the pan. Stir to coat the pieces properly with the spiced gravy.
