Matar Kulcha – A Street Food Classic

 Introduction:

Matar Kulcha is a North Indian street food that combines spicy, tangy white peas curry  with smooth, fluffy leavened bread . Soft kulchas are paired with spicy matar, this tastes amazing.

Method:

Preparing Matar

  1. Take a pressure cooker, cook soaked white peas with salt till soft.
  2. In a pan, add oil. After the oil is heated , add jeera , then add onions and sauté .
  3. Once onion is fried add tomatoes, garlic paste, ginger paste, and green chilies. Cook until tomatoes are cooked.
  4. Add powder masale like turmeric, chili , coriander , and garam masala.
  5. Now add cooked matar with some water .
  6. To finish the matar, at the end, add tamarind pulp or lemon juice . Decorate with coriander garnish .

Preparing Kulcha

  1. First make a dough for kulcha. Take flour, dahi, oil, baking powder, baking soda, sugar, salt in a bowl and mix them well.
  2. Knead into a soft dough the using warm water. Cover and leave it for 2 hours.
  3. Divide the dough into small balls. Prepare chapati(Round shape) with the dough. Sprinkle sesame seeds on the rolled roti chapati.
  4. Cook it until it turn golden brown on hot tawa.
