Khasta Kachori Aloo Chaat
Khasta Kachori Aloo Chaat is a fusion of crunch and flavor- a favorite Indian meals that brings flaky kachoris, spiced potato chaat, chutneys, and garnishes. It’s a showstopper for festive events, family gatherings, or at the same time as you want to recreate the magic of chaat stalls at home.

Ingredients:

For Khasta Kachori:

  • 2 cups all-purpose flour (maida)
  • 4 tbsp ghee or oil
  • 1/2 tsp salt
  • Water (as wanted for dough)
  • For Kachori Stuffing:
  • 1 cup moong dal (soaked for 2–3hours)
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/2 tsp red chili powder
  • 1/2 tsp haldi powder
  • Salt to taste
  • 2 tbsp oil

For Aloo Chaat:

  • 3 medium potatoes (boiled & cubed)
  • 1 tsp roasted cumin powder
  • 1/2 tsp chaat masala
  • 1/2 tsp red chili powder
  • 1/2 tsp black salt
  • 1 tbsp lemon juice
  • 2 tbsp coriander leaves

For Garnishing: 

  • Red Tamarind chutney
  • Green mint-coriander chutney
  • Fresh curd
  • Sev
  • Seeds of Pomegranate
  • Chopped onions
  • Coriander leaves

Method Of Preparation:

  1. Dough Making Process 
    • Mix the flour, ghee and salt collectively in a bowl and pour small - small quantity of water to make a good and tight dough.
    • Keep it aside for as a minimum 30 minutes.
  2. Stuffing Making Process 
    • Take oil and heat it in a pan.
    • In heated oil add saunf and cumin seeds. In this add soaked moong and cook it till fragrant.
    • Mix in all dry spices and cook until dry. Cool completely.
  3. Shape & Fry Kachoris
    • Divide dough into balls. Make a thin roti.
    • Spread organized dal stuffing lightly and cover it with any other layer of roti.
    • Cut with a knife and provide it a desired shape.
    • Heat oil in a kadhai, as soon as it’s fairly warm, add kachoris, fry them till crispy and golden .
    • Transfer it to an absorbent sheet and maintain it aside for further use.
  4. Aloo Chaat Preparation
    • To prepare the Aloo chat we will be required boiled potato, spices, lemon juice. Mix all well together
  5. Assemble the Chaat
    • In a plate place 2–3 khasta kachoris.
    • On top of Khasta kachoris add aloo chaat, chutney, curd, sev, onion and pomegranate on .
    • Sprinkle coriander for adornment.

Serving Tips:

Use chutney to serve Khasta Kachori Aloo Chaat. It’s best for festive spreads like Diwali, Holi, or own family get-togethers.
