Gobi Paratha, is a comfort food that brings a winter morning to life. A breakfast dish which can be served with homemade butter, tangy pickles and steaming cup of Chai .
Components:
For the Dough:
- 2 cups whole wheat flour
- Water
- Salt - 1/2tsp
- 1 tsp Oil
For Stuffing:
- 2 cups of grated cauliflower
- 1-2 green chilies
- 1 tsp grated ginger
- 1/2 tsp cumin
- 1/2 tsp Ajwain
- 1/2 tsp turmeric powder
- 1/2 tsp red chilli powder
- 1/2 tsp garam masala
- Salt - to taste
- Fresh coriander leaves - chopped

Method:
- Dough Preparation :
- In a bowl take flour and salt. Slowly add water and mix well to prepare a good and soft dough. Keep it aside for at least for 15-20 min and wait.
- Make stuffing:
- Remove excess water from cauliflower by pressing it gently and add green chillies, ginger and coriander. Add salt as per taste.
- Combine paratha:
- Divide the dough into equal parts. Roll out a small disc, fill a spoon in the middle and seal it together with the edges. Gently turn it into a thick paratha.
- Cooking paratha:
- To cook paratha use ghee or oil. Cook both side of paratha until it turns brown from both side.
- Serve hot:
- Plate with butter, pickle and yogurt - or wrap it in foil for a festive brunch !
