Gobhi Paratha: A North Indian Classic

Gobi Paratha, is a comfort food that brings a winter morning to life. A breakfast dish which can be served with homemade butter, tangy pickles and steaming cup of Chai .

Components:

For the Dough:

  • 2 cups whole wheat flour
  • Water
  • Salt - 1/2tsp
  • 1 tsp Oil

For Stuffing:

  • 2 cups of grated cauliflower
  • 1-2 green chilies
  • 1 tsp grated ginger
  • 1/2 tsp cumin
  • 1/2 tsp Ajwain
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala
  • Salt - to taste
  • Fresh coriander leaves - chopped

For Cooking:

  • Ghee or oil

Method:

  1. Dough Preparation :
    • In a bowl take flour and salt. Slowly add water and mix well to prepare a good and soft dough. Keep it aside for at least for 15-20 min and wait.
  2. Make stuffing:
    • Remove excess water from cauliflower by pressing it gently and add green chillies, ginger and coriander. Add salt as per taste.
  3. Combine paratha:
    • Divide the dough into equal parts. Roll out a small disc, fill a spoon in the middle and seal it together with the edges. Gently turn it into a thick paratha.
  4. Cooking paratha:
    • To cook paratha use ghee or oil. Cook both side of paratha until it turns brown from both side.
  5. Serve hot:
    • Plate with butter, pickle and yogurt - or wrap it in foil for a festive brunch !
