Peanut Rajgira Chikki, perfect for Navratri or any celebration. It is nutritious, adapted to fasting, and packed with crunch and nutrition. Components:
- 1 cup roasted peanuts
- 1/2 cup Rajgira seeds
- 3/4 cup jaggery
- 1 tablespoon ghee
- 1/4 teaspoon cardamom powder
Method:
- Prep the tray: Take a tray or a flat plate and grease it with ghee. Set on one side.
- Roast Rajgira and peanuts: Take pan and heat it on a high flame. Roast rajgira in it until it pops. Similarly roast peanuts on medium flame . Set them aside
- Melt jaggery: Take a heavy-bottom pan, add jaggery and 1-2 tablespoons of water. Heat on low flame until it melts and reaches the stability of a soft ball .
- Mix into goodness: Stir in the roasted peanuts and Rajgira quickly . Add cardamom powder.
- Setting: Transfer the mixture on the greased tray and flatten it with a spatula or rolling pin.
- Cut and cool: Once a little cold but still cut into squares or diamonds. Allow it to cool down completely before storage.
Suggestions:
- You can swap Rajgira with sesame seeds or puffed rice for variation.
- Store in an airtight container for 2 weeks.
