Ingredients:

- Red: 1/2 cup pomegranate seeds
- Orange: 1/2 cup sweet corn kernel (boiled)
- Yellow: 1 cup of boiled potatoes or chickpeas
- Green: 1 cup chopped cucumber + 3/4 cup mint-coriander chutney
- Purple: 1/2 cup red cabbage
- White: 1 cup whisked yogurt (1/2 teaspoon salt and 1/4 teaspoon roasted cumin powder)
- Brown: 1 cup of crisp papdi
Seasoning:
- 1/4 cup tamarind chutney
- 1/4 cup green chutney
- 1 teaspoon chaat masala
- 1/4 teaspoon black salt
- 1/4 teaspoon red chilli powder
- Chopped coriander leaves
Method:
- Prepare yogurt dressing:
- Whisk the yogurt until smooth.
- Fold in salt and roasted cumin powder.
- Make the base:
- Spread the papdi in a single layer on a wide, shallow plate.
- Level of colors:
- Spoon the yogurt on the papdi evenly.
- Alternative stripes of tamarind and green chutney.
- Arrange pomegranate, corn, potato/chickpeas, cucumber and cabbage in rainbow order.
- Season and Finish:
- Sprinkle the layers of spices, black salt and red chilli powder over the layers.
- Add sev or crushed papdi over the chaat for crunch .
- Garnish with fresh coriander .
Serve immediately to maintain the texture and color contrasts.

- For extra sweetness ,swap the potatoes for sweet potato .
- For more protein, add roasted peanuts or chana .
- Use coconut yogurt for a vegan version.
