Ingredients
For the Thecha:
- 4-5 green chilies
- 4 garlic cloves
- 1 tablespoon roasted peanuts
- 1 teaspoon cumin seeds
- 1 tablespoon fresh coriander leaves
- 1 teaspoon lemon juice
- Salt to flavor
For the Stuffed Mushrooms:
- 12 button mushrooms (stems removed)
- 1/2 cup grated cheese (cheddar or mozzarella)
- 1 tablespoon butter
- 1 teaspoon olive oil
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 teaspoon finely chopped fresh coriander
Instructions
- Prepare thecha:
- In mortar and pastel or food processor, grind green chillies, garlic, roasted peanuts, cumin seeds, coriander leaves, lemon juice and salt together until you get a coarse paste. Set one side.
- Mushrooms Preparation:
- Make your oven pre heat at 180°C (350°F).
- Clean the mushrooms and remove the stems and put them aside.
- Make filling:
- In a pan ,add butter and olive oil and place pan to heat up. Add the chopped mushroom stems and bake for 2 minutes.
- Stir in the prepared thecha and cook for another minute.
- Remove from heat and mix in grated cheese, black pepper, salt and fresh coriander.
- Fill the mushrooms:
- Fill each mushroom with a prepared mixture.
- Take a baking tray and place the place prepared mushroom lined with parchment paper.
- Bake:
- Bake the prepared mushroom for 12-15 minutes or till the cheese is melted and slightly golden.
- Serves:
