- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small knob of ginger, minced
- 1 tablespoon lemongrass paste
- 1 tablespoon red curry paste
- 1 can coconut milk
- 2 tablespoons fish sauce or soy sauce
- Juice and zest of one lime
- 3 cups fresh spinach, chopped
For Serving:
- Cooked rice (jasmine or basmati)
- Fresh herbs like cilantro, basil, or mint
Instructions:
1.Preparing the fish:
- Preheat your oven. Place a baking paper on a baking tray.
- Prepare a mixture with brown sugar, curry powder, onion powder, garlic powder, salt and olive oil to form a paste.
- Rub this mixture all over the fish. Place the salmon skin down at the baking sheet and bake for 6–12 mins.
- While the salmon is baking, prepare your rice.
- Fluffy, aromatic rice is an appropriate base for this dish.
- Heat olive oil in a pan over medium warmth. Sauté the garlic, ginger, and lemongrass paste for 5 mins.
- Now, upload the crimson curry paste and cook for any other 3 minutes. Stir within the coconut milk, fish sauce, lime juice, and its zest.
- Let the sauce prepare on low flame for some more time. Add the chopped spinach and stir until gentle.
