Paneer Shawarma Roll: A Fusion Feast

Smoky, spiced Paneer Shawarma Roll wrapped in soft pita with veggies and sauces. A perfect vegetarian street-style recipe for lunch, dinner, or party.

 Paneer Shawarma Roll

Vegetarian twist on the classic middle -eastern street food, this paneer dish bring together spicy paneer with crispy vegetables and creamy sauces, all wrapped in soft flatbreads. Perfect for quick lunch, picnic or party, breakfast.

Ingredients:

For Shawarma:

  • 250g paneer, 1 cm cut into thick slabs  
  • 1/2 cup thick yogurt  
  • 1 tablespoon lemon juice  
  • 1 teaspoon olive oil  
  • 1 tsp paste of garlic  
  • 1 tsp ground cumin  
  • 1 tsp Ground coriander  
  • 1 tsp Paprika (or kashmere chili powder)  
  • 1 tsp turmeric powder  
  • 1 tsp ground cinnamon  
  • 1 tsp black pepper 
  • 1 tsp Shawarma masala 
  • Salt, to taste  
  • 1 teaspoon oil

 For the Wrap:

  • 4 pita bread or large rotis  
  • 1 cup cut lettuce  
  • 1 cup of sliced ​​tomatoes  
  • 1/2 cup thin sliced ​​onion  
  • 1/2 cup of Juliennes with pickled carrots or beetroots (optional)  
  • A handful of French fries (optional)

For Yogurt Garlic Sauce:

  • 1/2 cup of Greek yogurt  
  • 1 tsp lemon juice  
  • 1 clove garlic, minced  
  • Salt and pepper 

 For Tahini Sauce:

  • 1/4 cup white sesame paste  
  • 1 tablespoon lemon juice  
  • 1 teaspoon olive oil  
  • Water  
  • Pinch of salt 

Instructions:

  1. Making Marinade: 
    • Take a bowl, mix curd, lemon juice, olive oil, garlic paste,  shawarma masala ,cumin, coriander, paprika, turmeric, cinnamon, pepper and salt.
  2. Marinade  Paneer:
    • Now, add  Paneer to the marinade Slowly . Cover and cool at least 30 minutes (or for 4 hours for deep taste).
  3. Panfry the Paneer: 
    • Take  a nonstick pan ,Heat 1 tablespoon oil in  on medium heat. Fry the  marinated paneer until golden and crisp on both sides, about 3 minutes per side. Remove and keep warm.
  4. Preparing the sauces:
    • Prepare the yogurt garlic sauce and tahini sauce  . 
  5. Wrap: 
    • Heat each wrap on a pan briefly. Spread a layer of yogurt garlic sauce, then tahini sauce on the toasted wrap . 
    • Top with lettuce, tomatoes, onions, pickles and some fries. Arrange paneer in the center and roll in a wrap.

 Tips and Variations:

  •  You can use  tofu or veggies for a vegan option.  
  •  Add a sprinkle of Sumac or Zatar to the extra tang.  
  •  Grill Paneer on Skewers for Authentic flavor.  
  •  Make it a bowl: Leave bread and pile on rice or salad greens.
