Samosa - Crispy Golden Pockets
Perfect Samosa, crispy golden pockets filled with spiced potatoes, paired with tangy red chutney and refreshing green chutney. A must-try Indian snack
Ingredients:
For the Dough:
- 2 cups all-purpose flour (Maida)
- 4 tbsp vegetable oil or ghee
- half of tsp salt
- Water
For the Filling:
- 3 medium potatoes (boiled and mashed)
- 1/2 cup green peas (boiled)
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 1/2 tsp red chili powder
- 1/2 tsp turmeric powder
- 1 tbsp ginger (grated)
- 2 tbsp coriander leaves (chopped)
- Salt to flavor
- 2 tbsp oil
Instructions:
- Preparing the Dough:
- Mix Maida, salt, and oil in a bowl.
- Gradually add some water and knead right into a firm dough.
- Cover and allow it rest for half-hour.
- Preparing the Filling:
- Now, heat oil in a pan, add cumin seeds
- Put ginger, potatoes, peas, and spices.
- Mix properly. Cook for 2-3 mins, then add coriander leaves. Let it cool.
- Assemble the Samosas:
- Divide the dough into small balls and roll them into skinny circles.
- Cut every circle in half, fold right into a cone, and seal the rims with water.
- Fill the cone with the potato combination and seal the top.
- Fry the Samosas:
- Heat oil in a deep pan and fry the samosas on medium warmness till golden brown.
Red Chutney Recipe
Ingredients:
- 1/2 cup tamarind pulp
- half of cup jaggery or sugar
- 1 tsp red chili powder
- 1/2 tsp cumin powder
- Salt to taste
- Water
Instructions:
- Mix tamarind pulp, jaggery, and water in a pan. Cook till the jaggery dissolves.
- Add chili powder, cumin powder, and salt. Simmer till thickened.
- Let it cool before serving.
Green Chutney Recipe
Ingredients:
- 1 cup coriander leaves
- 1/2 cup clean mint leaves
- 2 green chilies
- 1inch ginger
- 1 tbsp lemon juice
- Salt to flavor
- Water as needed
Instructions:
- Blend all ingredients into a smooth paste.
- Adjust salt and lemon juice to taste.
