Samosa - Crispy Golden Pockets

Ingredients:

For the Dough:

  •  2 cups all-purpose flour (Maida)
  •  4 tbsp vegetable oil or ghee
  •  half of tsp salt
  •  Water

For the Filling:

  • 3 medium potatoes (boiled and mashed)
  • 1/2 cup green peas (boiled)
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tbsp ginger (grated)
  • 2 tbsp coriander leaves (chopped)
  • Salt to flavor
  • 2 tbsp oil

Instructions:

  1. Preparing the Dough:
    • Mix Maida, salt, and oil in a bowl.
    • Gradually add some water and knead right into a firm dough. 
    • Cover and allow it rest for half-hour.
  2. Preparing the Filling:
    • Now, heat oil in a pan, add cumin seeds
    • Put ginger, potatoes, peas, and spices. 
    • Mix properly. Cook for 2-3 mins, then add coriander leaves. Let it cool.
  3. Assemble the Samosas:
    • Divide the dough into small balls and roll them into skinny circles.
    • Cut every circle in half, fold right into a cone, and seal the rims with water.
    • Fill the cone with the potato combination and seal the top.
  4. Fry the Samosas:
    • Heat oil in a deep pan and fry the samosas on medium warmness till golden brown.

Red Chutney Recipe

Ingredients:

  •  1/2 cup tamarind pulp
  •  half of cup jaggery or sugar
  •  1 tsp red chili powder
  •  1/2 tsp cumin powder
  •  Salt to taste
  •  Water 

Instructions:

  1. Mix tamarind pulp, jaggery, and water in a pan. Cook till the jaggery dissolves.
  2. Add chili powder, cumin powder, and salt. Simmer till thickened.
  3. Let it cool before serving.

Green Chutney Recipe

Ingredients:

  •  1 cup coriander leaves
  •  1/2 cup clean mint leaves
  •  2 green chilies
  •  1inch ginger
  •  1 tbsp lemon juice
  •  Salt to flavor
  •  Water as needed

Instructions:

  1. Blend all ingredients into a smooth paste.
  2. Adjust salt and lemon juice to taste.
