Pav Bhaji is a beloved Indian street food that combines a highly spiced, buttery vegetable mash with soft bread rolls.
Ingredients:
For the Bhaji (Vegetable Mash):
- 4medium sized potatoes (boiled and mashed)
- 1 cup cauliflower florets (boiled and mashed)
- half cup green peas (boiled)
- 2 medium sized tomatoes (finely chopped)
- 1 huge onion (finely chopped)
- 1 green capsicum (finely chopped)
- 1 tablespoon ginger garlic paste
- 2 teaspoons pav bhaji masala
- 1 teaspoons garam masala
- 1 teaspoon red chili powder
- half teaspoon turmeric powder
- Salt to flavor
- 2 tablespoons butter
- 1 tablespoon oil
- Fresh coriander leaves (chopped, for garnish)
- Lemon wedges (for serving)
For the Pav (Bread Rolls):
- 8 pav buns
- 2 tablespoons butter
- 1 teaspoon pav bhaji masala
Instructions:
- Preparing the Bhaji:
- Add oil and some butter in a pan to heat it. Now, add chopped onions and fry it. Add ginger garlic paste and cook for some time.
- Stir in chopped tomatoes, capsicum, turmeric powder, red chili powder and pav bhaji masala. Cook until the tomatoes turn soft. Add the boiled and mashed greens (potatoes, cauliflower, and peas.
- Mix properly and mash further the using of a potato masher. Adjust the consistency through including water as wanted. Cook for another 5 minutes.
- Add some butter to the prepared bhaji.
- Toast the Pav
- Heat butter in a flat pan. Sprinkle pav bhaji masala over the butter
- Slice the pav buns horizontally and toast them within the buttered pan until golden and crisp.
- Serve:
- Serve the hot bhaji with toasted pav, lemon wedges, and chopped onions and add some butter on top.
