Paneer Lababdar is a rich Indian curry. It has creamy texture, mildly tangy taste, and fragrant spices. Its prepared in tomato and cashew based gravy, with soft paneer cubes simmered in it . Paneer Lababdar can be made at home and for festive gatherings.

Method:

  1. Prepare the base :
    • Take a pan, heat oil and butter in it. Add cumin and cook.
  2. Cook the onions:
    • Add onions and sauté till golden brown.
  3. Add aromatics:
    • Add ginger paste ,garlic paste and cook till its slightly cooked.
  4. Tomato gravy:
    • Add tomato puree and cook until the combination thickens and releases oil.
  5. Spices:
    • Add turmeric, chili , coriander , and salt. Mix nicely.
  6. Add richness:
    • Add in cashew paste and cook for 2-3 mins. This will enhance creaminess.
  7. Simmer:
    • Add little water to adjust consistency and let the gravy simmer.
  8. Paneer time:
    • At this stage put paneer cubes in the gravy .
  9. Final :
    • Add garam masala, kasuri methi at the end. Mix .
  10. Garnish & serve:
    • Put coriander leaves and fresh cream to finish the dish.
