Method:
- Prepare the base :
- Take a pan, heat oil and butter in it. Add cumin and cook.
- Cook the onions:
- Add onions and sauté till golden brown.
- Add aromatics:
- Add ginger paste ,garlic paste and cook till its slightly cooked.
- Tomato gravy:
- Add tomato puree and cook until the combination thickens and releases oil.
- Spices:
- Add turmeric, chili , coriander , and salt. Mix nicely.
- Add richness:
- Add in cashew paste and cook for 2-3 mins. This will enhance creaminess.
- Simmer:
- Add little water to adjust consistency and let the gravy simmer.
- Paneer time:
- At this stage put paneer cubes in the gravy .
- Final :
- Add garam masala, kasuri methi at the end. Mix .
- Garnish & serve:
- Put coriander leaves and fresh cream to finish the dish.
