Navratri Vrat Thali Recipe: A Satvik Feast

A festive plate which  celebrates the spirit of Navratri with a vibrant plate - perfect for those who choose the tradition with the touch of the flare. Celebration of Navratri's Divine Energy is as nutritious as a tasty platter of fast-friendly recipes with this healthy plate. The plate is free from onion, garlic, wheat and rice, and use the elements such as Sabudana, Kuttu and Makhana.

Components:

For Sabudana Khichdi:

  • Sabudana (tapioca ) - 200 g
  • Boiled potatoes - 1 small, cube
  • Peanuts - 50g
  • Green chili - 1, chopped
  • Tomato - 1 small, chopped (optional)
  • Cumin seeds - 1 tsp
  • Rock salt - to taste
  • Ghee - 2 tsp
  • Fresh coriander - for decoration

For Kuttu Pakore:

  • Kuttu flour - 200g
  • Potato - 2 medium, sliced
  • Rock salt and black pepper - to taste
  • Water - as needed
  • Ghee or oil - to fry

For Aloo Sabzi:

  • Boiled potatoes - 2
  • Green chili - 1
  • Cumin seeds - 1 tsp
  • Rock salt and black pepper - to taste
  • Ghee - 1 tablespoon
  • Chopped coriander - for decoration

For the sides:

  • Yogurt - 1 cup (sweet or plain)
  • Roasted Makhana - a handful
  • Roasted peanuts - a handful
  • Sweet potato- 1, boiled and chopped
  • Seasonal fruits -  bananas, apples, pomegranate

Method:

Sabudana khichdi:

1. Soak the Sabudana for 4-5 hours until soft.
2. In a pan, heat the ghee and fry the potatoes and peanuts. Set one side.
3. Add cumin, green chilli and tomato. Briefly.
4. Add soaked sabudana, salt and pepper. Mix well.
5. Add the fried potatoes and peanuts. Cook the cover for 5 minutes.
6. Decoration with coriander.

Kuttu Pakore:

1. Take a bowl. To make a batter, mix kuttu flour, salt, pepper and water together .
2. To make pakore , dip the potato pieces in the batter and deep fry until golden .
3. You can serve pakore with yogurt or chutney.

Aloo Sabzi:

1. Take a pan, heat ghee in it. Add cumin and green chilli.
2. Add mashed potatoes, salt and pepper. Mix well.
3. Cook for 5 minutes. Garnish with coriander.

Assembly:

Arrange all dishes like Sabudana's khichdi, kuttu pakore, potato sabzi, yogurt, roasted makhana, peanuts, potatoes and fruit in a plate. Serve with love and devotion.

Tips:

  • For a traditional touch, use banana leaves or brass thalis .
  • Decorate with edible flowers or basil leaves.
