Spicy & Sweet Lemon Pickle is made with combination of lemons, chili powder, sugar or jaggery, and salt. The lemons give a sour flavor. The chili makes it hot, and the sugar give sweetness. Mustard seeds and turmeric are regularly introduced for added flavor. When kept for a few days, the taste will become more potent and better. This pickle goes properly with rice, chapati, or paratha, and it also enables in digestion.

Ingredients:

  • 12 medium lemons (washed and dried)
  • 3 tbsp salt
  • 2 tbsp red chili powder
  • 1 tbsp turmeric powder
  • 1 tbsp roasted fenugreek seeds (powdered)
  • 1 tbsp mustard seeds
  • 1/2 cup mustard oil
  • 1 pinch of hing
  • 1 nd half of cups sugar (alter to taste)
  • 1 tsp roasted cumin powder
  • 1 tsp black salt

Method:

  1. Cut lemons into 4 piece and remove seeds.
  2. In Lemon pieces add salt, turmeric, and chili powder. Mix it well together.
  3. Heat mustard oil and keep it side to cool down slightly.
  4. In cool oil ,add mustard seeds, hing, and fenugreek powder.
  5. Pour this spiced oil over the lemon mixture and stir properly.
  6. Add sugar, cumin powder, and black salt. Mix till sugar dissolve completely and coat the lemons.
  7. Transfer to a smooth, dry jar.
  8. Let the pickle mature for 10–15 days, shaking the jar on occasion to combination flavors.
