Ingredients:
- 1 cup of Sabudana (tapioca pearl)
- 2 medium potatoes, peeled and dice -cubes
- 1 cup of roasted peanuts, crushed
- 2 green chilies, finely chopped
- 1 teaspoon grated ginger
- 1 teaspoon cumin
- 8-10 freshly curry leaves
- 1 medium lemon juice
- 2 tablespoons of oil or ghee
- Salt, to taste or Himalayan pink salt if fasting
- A pinch of sugar (optional)
- 2 tablespoons freshly chopped coriander
Method:
- Soak
- Rinse the pearls under cold water until the water is clear. Transfer to a bowl, just cover with enough water, and dry 6-8 hours or overnight.
- Drain well before using.
- Roasting peanuts
- In a pan , dry roast the peanuts until they are golden.
- Let them cool, then crush them- some bite will add a beautiful texture
- Cook the potato
- Heat oil or ghee in a skillet on medium heat. Add cumin and let them splutter. Now, add in the curry leaves, ginger and green chillies in the pan. Fry for 30 seconds, then add the chopped potatoes.
- Cook until the potatoes are cooked and crispy. Add salt and a pinch of sugar.
- Combine and Stir-Fry
- Reduce the flame slightly. Add the soaked and drained tapioca and crushed peanuts to the pan.
- Mix gently to coat everything evenly with spices and oil.
- Cover for 4-5 minutes and cook on low, stir in half the way until pearls are translucent and do not stick together for a long time.
- Finish
- Close the heat. Squeeze the juice of lemon over the khichdi and add in fresh cilantro.
Tips and Variations:
- For extra color, add a diced capsicum or carrot with potatoes.
- If you prefer a light meal , swap peanuts for roasted cashews.
- If you like the heat, add chopped green chilli.
